On a Tuesday Night

Last night I…

  • made Half Baked Harvest’s One Skillet Greek Meatballs with Lemon Butter Orzo. I halved the quantity of green olives and added some thinly sliced preserved lemons (incorporating them into the dish at the same time as the olives). It was a big hit with everyone in the house.
  • whipped up this No-Bake Lime Cheesecake for dessert. It was delicious, but I think I’d like it with even more lime flavor. Maybe I’ll add a bit of lime zest next time. I also think it’d be equally great subbing lemon for the lime, or maybe even grapefruit?!
