With only two kiddos, it’s easy to make this work with one muffin tin. I place one kiddo’s ingredients along the length of one side, the other kiddo’s on the other side, and if we have any “extras” those go in a few spots in the middle row.

We keep the ingredients pretty basic:

  • ground beef cooked with some garlic powder, cayenne, paprika, and salt
  • refried beans
  • diced tomatoes and/or salsa
  • shredded lettuce
  • grated cheddar cheese or crumbled queso fresco

The boys sit across from each other at their little table with the muffin tin in the middle within easy reach. They have empty shells on plates and are free to pile in their ingredients however they want.
