First Snow Cake!

This is part of our ongoing Cooking with Kids series, because bringing them into the kitchen creates bonding moments, opportunities to learn, and plenty of messes! And ginger is our ingredient of the season this fall. You can find more ginger recipes here, but if you want another dessert recommendation, skip right ahead to these chewy ginger cookies.

A few weeks ago, we woke up to our first snow of the season. If that wasn’t special enough, I thought that it was worth fully celebrating the day, and any celebration worth its salt requires a cake. That was the humble beginning of our “First Snow Cake”.

The base of our cake is a delicious ginger cake and it’s topped with a healthy layer of powered sugar snow. It’s a simple cake that’s easy to bake on a whim and should definitely be incorporated into your next snow day. Cooking with Kids : Chia Pudding

Cooking with Kids is an ongoing series where we share recipes that are easy enough to make with a two-year-old. If you’re new to the series, our first post that provides our detailed tips for cooking with little ones.

We’re so excited about today’s chia pudding because it’s a delicious dessert that’s  amazingly healthy thanks to the chia seeds. This is also a dish that a little chef can put together *almost* entirely on their own! Why almost? There is a pesky can opener involved, and that can slow down even the most ambitious 4 year old.

There are so many benefits to letting your kids help in the kitchen, from the basics of learning to count and measure, to the more advanced following of instructions. You’ll also delight in seeing them take pride in their work and their ability to do something for others – how excited will they be to serve this pudding to everyone else in the family?! And finally, for some kids, this recipe may introduce new tastes; there’s the strong coconut flavor with a hint of cinnamon, and there’s the unique texture of the saturated chia seeds.

Best Scary, Dark, Horror, and Halloween T.V. and Movies on Netflix

It’s scary movie time! Even if you’re a horror hater, you must watch at least one creepy flick this month. I recently watched The Houses October Built with a few of my friends and I was so surprised at how well done it was, more on that below. I decided to compile a list of my favorite Netflix shows and movies that veer towards the dark side. There are a few I haven’t watched, but are on the list, I’ll denote them with an asterisk* Happy haunting!

The Fall – This is a Netflix original T.V. show and like the rest, it’s amazing. The Fall is about a detective trying to track down a serial killer.  This show is disturbing on a few levels. The serial killer is an attractive, unassuming family man, and the violence portrayed against women is pretty graphic. Maybe don’t watch this one if you’re a single lady living alone.

The Killing – Another Netflix original T.V. show, The Killing is based on the investigation that takes place after the murder of teen Rosie Larsen. I watched the first two seasons and then I faded out, but initially, it is a nail-biter.

*Mindhunter – I haven’t watched this one yet, but it sounds super interesting. Yet again, another Netflix original (they obviously know what viewers want) it’s about two FBI agents in the seventies who look at the psychology of murderers.

Hostel – I saw this movie in 2005 before I had ever traveled anywhere. I didn’t even realize what a hostel was or that this concept for shared bunk rooms was prevalent in most countries besides America, where there are surprisingly few. Eeeek, travel and horror, this one hits close to home.

Saw – All the Saws are on Netflix right now, but if you haven’t seen the first one, it’s by far my favorite. Saw is the type of movie that horrifies me because I didn’t even know such dark thoughts were possible. You’re a real freak, James Wan. Thanks for having a healthy outlet for your dark thoughts.

*Gerald’s Game – I haven’t seen this, but it has a rating of 9.1 on IMDB, which is unheard of for a horror film. Here’s the synopsis: while trying to spice up their marriage in their remote lake house, Jessie must fight to survive when her husband dies unexpectedly, leaving her handcuffed to their bed frame. I think the movie delves into the darker side of one’s psyche.

Gremlins – A classic and actually a lot freakier than I remember it being. Basically, a new pet turns into a thousand new mischevious little monsters that wreak havoc all over town.

The Babadook – A dark movie with an interesting theme. I really enjoyed how vague The Babadook was at times, but how evident it was during the final few scenes. A satisfying watch.

The Houses October Built – I thought the premise of this scary movie was sooo spookey. It’s about five friends on a road trip looking for the ultimate haunted house. They travel around looking for bigger and better scares until it seems like it’s being taken too far or is it all part of the haunt? Who knows?!

 

Hopefully you have a friend or at least a pet to watch these flicks with, if not, you may want to stick to the Gremlins. Good luck!

It’s Friday the thirteenth, which means we’re halfway through October!? Our hearts ache. July has always been my favorite month of the year (hellllllo, it’s our birthday month!), but since I moved south, I’m all about October. In North Carolina, the temperature hovers around eighty and yet the leaves are changing and falling, we experience light afternoon sun showers, and the mornings and evenings are a bit cooler. October is hands feet down the best month for hiking. I could sustain this season’s feeling all year long.

At the beginning of the month, I pulled out my boots, but realized, I’m way too early for that down here, lucky me, I’m headed to Pennsylvania today to photograph a wedding. The boots, sweaters, and jackets are packed in the Schubaru so my buddies don’t have to hear me complain too much. And they won’t because I’m headed to Tulum, Mexico on Sunday! This will be my first trip to Mexico and although I can’t remember ten words of Spanish, I’m mucho pumped.

Some of my most memorable hikes have happened in the fall. Of course, the brisk weather and colorful foliage make for beautiful memories. But there’s also something about the shorter days anticipation of a long, cold winter indoors that makes the need to get outside even more urgent at this time of year.

Looking Up & Around

Happy October, friends. Autumn is here and so is the full harvest moon! Set aside some time today to gaze up at that big astronomical body. If you’re familiar with monthly moon names, you may be wondering why it’s the harvest moon instead of the hunter moon, which normally falls in October. The harvest moon isn’t confined to September. It is actually the full moon that falls after the autumn equinox, which we celebrated on September 22. The harvest moon fell in October in 2009 and will land there again in 2020, so it’s rare, but definitely not unheard of.

What else is happening this month? As always, but possibly more apparent this month, are all the changes taking place in the woods. I always think of October outdoors as a month of transition. We experience the leaves, nuts, and seeds falling from trees and traveling in the breeze. Mushrooms are springing up after the first fall rains, while flowers are both blooming and going to seed. Bees are still buzzing (and stinging me), while squirrels and chipmunks scurry around securing their own harvest.

This is quite possibly the most comfortable month to be out and about in the woods. Sunshine, cool breezes and barely any bugs make every hike a great one. I’m spending the week working in Asheville, North Carolina, an area that absolutely explodes with leaf peepers, especially on the Blue Ridge Parkway. Tens of thousands of people flock to western North Carolina during October and November to watch the autumn colors slowly emerge starting with higher elevations and trickling down the mountainsides. The elevation range in the Great Smokey Mountains basically ensures that fall color will stick around for at least three weeks each year. There are websites dedicated to tracking the changing fall foliage and it’s impossible to miss the influx of visitors as traffic can be bumper to bumper on the blue ridge and hotel rooms impossible to find.

Fields and Festivals

It’s that time of year when farmer’s markets in my area transition from two days per week to one. I know, I’m spoiled, but sometimes it’s hard to wake up on a Saturday and when that’s the case, what’s a girl to do? I had to make a quiche this week with store-bought mushrooms, WTF. Joking aside though, I love the market at this time of year. The weather is sunny, but the air is cool. I can sip on cider or tea while strolling by each vendor as I slowly make recipe plans and ingredient decisions. In contrast, during the summer, I’m gulping down iced coffee and wanting to put down my bags, take off my tank top, and pass out from heat exhaustion. No chill.

This is the time of year when those crops that require the full summer growing season are finally ready for harvest. In Chapel Hill, North Carolina, I’m still seeing watermelon and tomatoes along with elderberries, grapes, peppers, and eggplants. Apples, okra, corn, potatoes, pumpkin, and other winter squash are abound as well.

The coolest thing at my market right now though? Soup subscriptions. How freaking neat. Short Winter Soups, a company established by Tova Boehm in 2010, provides each subscriber with a quart of soup every week for eight weeks. The soup ingredients are sourced locally from over a dozen farms. I love this idea and the thought of Tova pouring stirring her heart and soul into delicious soup recipes each week. Growing up, our mom made a lot of soup. Momma Schu’s soups were a staple during family gatherings, soccer games, snowstorms and weekends on the farm. Soccer concession stand fans would actually refer to her as the soup queen. All hail the soup queens among us.

If you’re not feeling the farmer’s market, October is the month to head straight to the fields. Hayrides and pick-your-own patches are some of my fondest fall memories, not just as a kid, but up until a few years ago too. I feel like I’ve traveled the past few falls because I can’t remember the last time I carved a pumpkin or balanced an apple on my head (holy shit that was seven years ago), what a shame! If you need any inspiration for your fall harvest, we have a full pumpkin archive, with a few main dish recipes as well as an apple archive that includes more alcoholic drinks than you could make all weekend. I dare ya.

  • I mentioned watching the leaves change in the Great Smoky Mountains. Ready for your mind to be blown? It’s the most popular national park with over eleven million visitors last year. In.sane.
  • Vermont is also a popular destination for leaf chasers, but really, any forest is bursting with color this month so where ever you are, you don’t have to drive far, tie up your boots and hit the trail.
  • There’s more than just colorful leaves floating around, the Albuquerque Balloon Fiesta runs from the 7th-15th. It’s always been a dream of mine to attend and one day I’ll remember to make plans more than forty-eight hours in advance. I believe in me.
  • The Earth Harmony Festival is this weekend (October 7-8). The Earth Harmony Festival celebrates eco-living & sustainability.  It’s held on the country’s largest EcoVillage located in Arizona. Did I mention that it’s practically free?! You gotta go.
  • While September was packed with environmental holidays, October has only a couple official ones, including World Habitat Day, which just passed on Monday. We kinda missed the boat on that one, but it’s not too late to stop and reflect on our basic human right to adequate shelter. Maybe you’d like to do some volunteer work this month in conjunction with homeless shelters as a way to commemorate the day?

Capturing the Beauty

How do we hang on to enchanting autumn as long as possible? Take some photos! The time lapse of our apple antics is still one of my favorite photo sessions with the Schu sisters. I can still remember how much we giggled when those were taken seven years ago! I like to balance out the silly with the serious though. I think the film portrait of our sister Kristin, shown above, captures her spirit perfectly. Add that it’s taken on the road that leads to our family farm and you have an iconic photo that will surely be shared for generations. As each season passes, I find it more and more important to take photos of family and friends and what better backdrop than a carpet of freshly fallen leaves? Here’s a tutorial on photographing fall and photographing landscapes in general. Even if you fail to preserve fall on film, I hope you capture it in your heart. Cheesy?! IDGAF.

Ahhh, I meant to share this post before Christmas so that you could add yet another cookie to your baking list, but time got away from me, so here we are with a delicious ginger cookie that tastes just as good on a cold day in January as it would during the hustle and bustle of Christmas.

And I’m still smiling about how this came to be my favorite ginger cookie recipe. Calder’s sister made them a few years ago at Thanksgiving. That first batch was delicious and reminded me of the ginger chews that I used to buy in Trader Joe’s. I was so smitten that I asked for the recipe. She sent it along, and from her notes, I could see that it came from the grandma of a good friend. As I was baking these with Alex, I looked more closely at the bottle (more on that below) and realized that the recipe on the Grandma’s Molasses bottle matched the recipe I was making! Ingredient for ingredient and word for word. So, maybe you already know this recipe?

Ask most photographers what they truly want to shoot and the answer is almost always landscape and travel photography. If there was a viable way to make a living from nature photography, we would all be doing it. It’s not impossible, but it usually comes with the goal of selling something, a product, a place, an agenda, it’s never just a nature shot. That doesn’t stop us from taking our cameras to the woods though.
