Cocktail Recipe: Mexican (Hot) Chocolate

This cocktail was 100% inspired by Mexican hot chocolate. It has the cocoa, the spices, and some milk, but I wasn’t sure what to call it because it’s served over ice. Does it count has hot chocolate when it’s not hot?! Whatever we call it, this is delicious and perfect for when you’re gathered around the fireplace this season.

Classic Margaritas

Margaritas are a beach favorite, especially for our pop. We came up with this blend last summer, and a year later this simple recipe still hits the mark. It’s the perfect balance of sweet + tart with the right hint of tequila shining through. Seeing that there’s still two weeks until Labor Day, you’ll have plenty of time to blend up this classic summer drink.

Classic Margaritas

  • 1/4 cup simple syrup
  • 1/2 triple sec
  • 3/4 fresh lime juice
  • 1 cup clear tequila
  • ice
  • salt

Fill a blender with ice, add the remaining ingredients except salt, and blend. Pour the mixture into glasses with salted rims (we just use some of the blended cocktail to wet the rims before dipping them in salt).

Give a little toast to the end of summer and enjoy every last drop. xo

Spring of Deception

This cocktail was inspired by a meme. You know the one, it names the 12 seasons of Colorado, and right now we are smack in the middle of Third Winter. We need this drink to survive.

Oh Colorado, we love you and we love snow. We’ve lived here for 7 years now and are fully aware that March and April are our snowiest months. But even we can be fooled by the promise of summer the moment we experience our first 70F weekend in March.

Then comes a big snowstorm, and we’re reminded that it’s still ski season! We ski on those bluebird days, so happy to be in the mountains. Remembering that Colorado winters aren’t bad, they’re beautiful.

August Afternoon Cocktail

Last week we had a pile of ripe Colorado peaches sitting on the counter. With that as my inspiration, I wanted to come up with a cocktail highlighting the ripe fruit and evoking the pleasure of a late summer afternoon. I think you’ll agree that this is it. <3

August Afternoon Cocktail

The creaminess for this cocktail comes from the addition of an egg white. You can read more about my love affair with egg white cocktails along with a bit of information about how to make them in this post.

  • 2 oz vodka
  • 1 oz ginger simple syrup
  • 1 oz fresh lemon juice
  • 1/4 to 1/2 of a peach, chopped
  • 1 egg white
  • splash of ginger beer
  • dash of bitters, optional
  • ice

  • Place the vodka, simple syrup, lemon juice, and peach in a blender. Blend for a couple of seconds to break up the peach.
  • Add the egg white and blend again.
  • Pour the blended ingredients into a cocktail shaker with ice and shake to chill.
  • Pour into a glass over ice. Add a splash of ginger beer, garnish with a peach slice, and add a splash of fancy floral bitters.

Normally you would just see a layer of foam over the cocktail, but in this case you’ll see any extra bit of layering/separation due to the blended peach fruit. It may look a bit funny, but it’s definitely worth it. You could always serve this some fancy textured tumblers… but maybe those should be reserved for piña coladas?!
