First, homemade Jalapeno Poppers, hells yeah! Second, little mummy lookin’ cuties?! YES! Threaten me with food that follows a holiday theme and I’m in, especially when cooking with friends, it just makes everything so much more enjoyable. Kimi and I cook together on the regular, but usually it’s some type of main meal, not cute, perfect for a halloween party, Mummy Jalapeno Poppers. This is exactly how it went down..

I will say that for the result (not a heck of a lot of food) these Mummy Jalapeno Poppers take a little bit of work. It’s best to do it with a buddy or maybe in shifts. Cut the and clean the peppers and mix the cheesey stuff then take a little break before powering through the putting together of it all.

Jalapeno Mummy Poppers

Ingredients

  • Bag of Jalapeño Peppers (about a dozen)
  • 8 oz Softened Cream Cheese
  • 8 oz Pepper Jack Cheese
  • 1 Scallion chopped
  • 1 teaspoon minced garlic
  • Pinch Salt
  • Pinch Pepper
  • Sprinkle of cayenne
  • Candy Eyeballs
  • 1 Package Pillsbury Crescent Rolls
  • 1 Egg (optional)

Instructions

  1. Remove the cream cheese from the fridge.
  2. Grate the pepper jack cheese.
  3. Chop the scallion and mince the garlic.
  4. Cut each jalapeno in half length-wise and scrape out any seeds with a spoon.
  5. Preheat the oven to 375º.
  6. Mix the cream cheese, pepper jack cheese, chopped scallion, garlic, salt, pepper, and cayenne in a bowl.
  7. Open the crecent rolls and spread them out flat on a cutting board.
  8. Cut them into long thin strips.
  9. Spoon a hearty portion of the cheese mixture into each pepper.
  10. Now wrap each pepper up like a mummy, pulling on the dough to stretch it around each pepper.
  11. If you'd like, you can brush or spoon a little bit of egg wash across the mummies, this will help them brown a little bit.
  12. Bake the poppers for about 12 minutes. I checked mine half way through and changed their posistioning on the pan so they all browned evenly, I guess this will depend on your oven.
  13. Once cooled and only then, add the eyeballs. (Adding the eye balls cool allows them to be popped off easily instead of melting into your popper - I recommend taking the eyes off before eating them, but that's just me!)

That’s that!  It’s a pretty easy recipe that you can certainly alter to lean one way or another. These Mummy Jalapeno Poppers were not very spicy because we used relatively young, green jalapenos. The redder, older, and more ‘stressed’ (peppers with white striations going through them), the hotter they will be. Enjoy!
