We’re calling this fried chicken, because that’s what we’ve always called it… but there’s no oil involved.
I heard a quick NPR story encouraging busy families to cook at home rather than order delivery. I know that it can seem like an insurmountable task at the end of a long day, but I couldn’t agree more (for a slew of awesome reasons).
Obviously one of the biggest hurdles can be knowing how to cook food that is quick, simple, and tastes delicious. That’s today’s recipe in a nutshell. And it saves the day if you’re craving fried chicken and want to pick up a big ol’ bucket on the way home.
Our Mom’s Fried Chicken
Ingredients: chicken thighs and flour
Timing note: The only thing that’s no necessarily quick about this chicken is the cooking time (about 90 minutes). So, get it in the oven as soon as you get home, and then you’ll have plenty of time to put together a side dish while it’s cooking.
- Step 1: Stop by the grocery store for chicken thighs (the kind with bones AND skin).
- Step 2: Preheat the oven to 375F. Coat both sides of the chicken in flour, and only flour. It will stick in a thin layer, and that’s all you need.
- Step 3: Place the chicken on a baking sheet SKIN SIDE DOWN. Place in the oven for about 40 minutes.
- Step 4: Flip the chicken and return to the over for about 45 minutes.
- Step 5: Enjoy!
Really there are about two steps in there, I just spread it out to make it look like you had to work for chicken this good. 😉
You can add spices to the flour if you so desire. You can also omit the flour and fry without. When finished you can drizzle with Garage Top Honey, or baste near the end with your favorite barbecue sauce.
