How’s that for alliteration?!
Today we’re sharing the simplest of potato sides with a twist (hehe).
This is our first spiralized vegetable recipe that we’re sharing on the blog. Spiralizing is still a new technique in our kitchen, and we’ve kept the dishes simple so far : spiralize the vegetables and cook them with some olive oil and garlic. That’s the gist of what we’re sharing today.
The Spiralizer
Spiralizing is really just cutting your vegetables into long, curly noodles. Some people will then substitute the spiralized vegetables for actual pasta, but we aren’t substitution-people We still like regular pasta, but we love spiralizing for giving us other options for how we cook and prepare vegetable side dishes.
We have this super simple spiralizer. It doesn’t take up much space in the kitchen and is super easy to use, especially if you’re only using it once a week. This one requires a bit of manual work, which is really easy for a soft vegetable like zucchini (our favorite!). Spiralizing the sweet potatoes took a bit more muscle, but again, not bad for one meal per week. If I really get into spiralized veggies, I may look into another spiralizer that’s more ergonomic.
Spiralized Sweet Potatoes
For this dish, I found the information on the Inspiralized site very helpful.
For our family of four, we spiralized two peeled sweet potatoes. Peeling is important, because the tough skin would make spiralizing more difficult, especially with a manual spiralizer.
Once the potatoes are cut, I spread them out in a 9×13 glass pan. Then I added a liberal dose of olive oil and gently tossed the noodles. The oil was followed by a generous sprinkle of both salt and garlic powder, and again more gentle tossing.
I roasted the noodles in a 400F oven until soft. Once removed from the oven, they were super easy to pick up from the pan and form into nests on our plates. On this particular night we served these as a side with grilled chicken.
While simple, these potatoes were super delicious and amazingly kid-friendly.
Although admittedly, for how good these noodles are, I think that in our house spiralized zucchini is still king. Have you tried spiralized veggies yet? If so, what’s your favorite recipe?!

The feta cheese and whatever other flavorings are in there just taste SO FRESH. So tasty!
I’d never heard about spiralizing veggies, but it looks delicious! I’d love to try it someday!
It’s so good, Kelly! Just last night we had spiralized zucchini sautéd in olive oil with a bit of minced garlic. It’s delicious! We’ll share that simple side with some photos soon.
