There are many recipes for red beet eggs online. All of them involve more ingredients than ours, because this is the simplest cheat that we’ve ever suggested.
Pickled red beet eggs are something that we’ve grown up with. Our grandmother would make them, then our mom, and now us!
Picked Red Beet Eggs
I like these eggs for their pretty pinkish-purplish color. I think there’s a very slight flavor that the pickling adds, but really that’s it. You’re eating a beautiful hard boiled egg.
- Place peeled hard boiled eggs in a larger jar, add the juice and some beets from jars of pickled beets.
- Let the mixture sit in the fridge for about 3 days, then enjoy!
What can you do with them? Really anything that you’d do with a hard boiled egg. Eat them as a snack, add them to a salad, turn them into egg salad.
These are particularly fun for Easter. Imagine using them for deviled eggs!
