This is one of those recipes that I’ve always wanted to make, but didn’t take the initiative until we decided upon cinnamon as our ingredient of the season.
This pitcher of horchata was so easy to make and definitely exceeded my expectations!
Homemade Horchata
Having no experience with making horchata, I looked at a few recipes on the internet and ended up following this one from My Latina Table.
- 1 cup white rice
- 1/2 cup chopped almonds
- 1 cinnamon stick
- 12 oz evaporated milk
- 1.5 cups milk
- 2/3 cup sugar
- 2 tsp vanilla
- 4 cups water + more for soaking
- ice
- Cover the rice, almonds, and cinnamon stick in water and soak overnight.
- In the morning, strain and dispose of the water. Place the rice, almonds, and cinnamon stick in a blender with the evaporated milk. Blend until relatively smooth.
- Strain out the solids, reserving the liquid. Add the milk, sugar, vanilla, and water to the rice liquid. Stir well until sugar has dissolved.
- Serve over ice, sprinkle with cinnamon, and enjoy!
