Three Champagne and Shrub Cocktails for New Year’s Eve

_DSC1436Happy New Year’s friends!  This morning we took a few minutes from our hectic, kid-wrangling schedule to create some quick and delicious shrub and champagne cocktails.  Shrub is pretty much our favorite mixer and champagne is hands down the alcoholic bevy of New Year’s so boom – this post was born.  If you’re having a dry New Year’s, no worries, just swap out the champagne for seltzer and ignore the liquor suggestions or stir up some of these delicious mocktails instead!  If you’re down to drink, read on!

Let’s start with the easiest of easy shrub and champagne fizzies: Add 1 tablespoon of lemon shrub (or any flavor) to 8oz of cold champagne.  Give it a light stir and enjoy! Want to fancy it up? Add a twist of lemon and impress the pants off your guests.

_DSC1423Next up is a refreshing lime, thyme, rum and champagne mixer.  Mix one tablespoon of lime shrub, 1 ounce (or more or less to taste) light rum, 7 ounces of champagne and a few sprigs of thyme.  Give it a little stir, take a sip, and pretend you’re celebrating in the Caribbean.

Let’s be a little more specific about your Caribbean vacation.  Envision yourself on the coast of Jamaica mon, home of the best ginger beer. Mix one tablespoon of ginger shrub with 1 ounce of gin, 3 ounces of ginger beer and 4 ounces of champagne and enjoy!  Ginger beer is nonalcoholic BTW, so even if you’re subbing the champagne for seltzer, don’t skip on the ginger beer! If you can’t find ginger beer in a pinch, ginger ale will have to do 🙂

If you’re curious about the exact products we used, this brand of shrub is the very best (according to us of course), but it’s not carried nationally so any shrub will work in a pinch.  Reed’s ginger brew is super tasty, but there may be a local brew near you, so do some seeking and searching if you are so inclined. As for the champagne, we prefer Brut and this is the exact bottle we used.  As for the liquor, we used Bacardi rum and Leopold’s American Small Batch Gin.  Those are just the brands we had on hand, if you have something else laying around – use it!
